Ingredients

    1/4 cup rolled oats
    1/2 cup water
    1/4 cup plain canned pumpkin
    a few tbsp plain or vanilla fat free yogurt
    1/4 tsp pumpkin pie spice
    up to 1 tbsp honey (opt).
    1 tbsp chopped pecans

Directions

On stove, bring water to a boil. Stir in rolled oats and allow to cook for about 3 minutes, stirring occasionally. Stir in canned pumpkin and pumpkin-pie spice and honey; cook another 2 minutes.
Remove from heat, stir in chopped pecans; cover until you're ready to eat.
Spoon on yogurt just before serving and enjoy!

(alt. for TMJ), if you throw the pecans in at the beginning they will soften considerably. Also, you can use more of them for more healthy calories - just crush them into a fine powder or itsy-bitsy pieces.

    Very Good
    I really like this, I must admit that I didn't have any plain oatmeal so I substituted with cinnamon swirl oatmeal and omitted the honey, yogurt and traded almonds for the pecans. This may be my new favorite breakfast! - 12/8/09
