Ingredients

2-3 medium to large yams
2 large onions
2 large apples
2 tbs oil
2 tbs sweet sushi vinegar
2 tbs brown sugar or honey, or 1 tbs agave nectar
ΒΌ cup uncooked walnuts
dash of salt
dash of pepper
Directions
Preheat oven to 375. Decore apples and onions, and cut apples, onions, and yams into medium to small chunks and put in large mixing bowl. Mix oil and vinegar together in separate bowl, then pour oil and vinegar mixture over the apple, onion, and yam pieces. Stir until thoroughly coated. Spray a large glass casserole dish with a little cooking oil, or rub lightly with oil. Pour onions, apple, and yam mixture into dish. Sprinkle the salt, pepper, nuts, and brown sugar over the top. Cover dish with aluminum foil, and cook at 375 for 40 minutes. Uncover and cook another 10-15 minutes, or until all ingredients are soft enough to easily stick a knife through. Makes 3-4 servings. Great if paired with a leafy green salad (with dried cranberries!).
