Ingredients

    Manicotti:
    1 Egg
    2 small tubs of Ricotta (You won't use all, but 1 won't be enough)
    1 small bag of Part-skim Mozzarella
    1 Green Giant package of Microwave steam Spinach

    Egg Wash
    1/3 C Egg White
    1 Egg
    1/2 C Rice Milk

    1/2 C Flour*
    1/2 C Italian Style Breadcrumbs*
    *You will need a lot more, but I figure that 1/2 C is about all that sticks and that you actually eat. :)

Directions

Makes 7-9 Servings of approx 6- 2 inch "bites".
Cook Manicottis in large pot for 7 minutes (al dente).
Combine ricotta, mozzarella, ONE egg, and spinach.
Fill each ricotta as full as you can get them with a small spoon. Be careful. It takes time, but it's worth it!
After stuffing, cut each noodle CAREFULLY into 3-4 pieces (cut across to make "bites" -not longways)
*When breading, remember "FEBruary" Flour, Egg, Breading.*
Cover each "bite" with Flour, then Egg, then Breading.
Place all "bites" on large cookie sheet and bake at 375° for 20 minutes.
You can also add parmesan into the cheese mix and dip them into some yummy marinara, but these are NOT reflected in the nutritional facts.
