Introduction

Ingredients

    1 C Four Flour Bean Mix
    3/4 C Buckwheat Flour
    1/4 C Flax Seed Meal
    1 tsp Salt
    2 tsp Baking Powder
    1 Tbl Brown Sugar
    2 C Non-fat Plain Yogurt
    2 Eggs, slightly beaten
    1 Tbl Oil

Directions

Wisk the dry ingredients together. In a separate bowl, combine the wet ingredients. Add the wet ingredients to the dry ingredients and mix just until incorporated. Fry in skillet at a slightly lower temperature than regular pancakes. Since they are thicker, it takes longer to cook, so they an burn if the heat is too high.

Variations: Use milk instead of yogurt, add fruit and nuts, mix up the flours.
