Introduction

I grew up making this rice in Brazil. It has amazing flavor and goes great with stir-fries, chicken, curry, or just about anything. I grew up making this rice in Brazil. It has amazing flavor and goes great with stir-fries, chicken, curry, or just about anything.

Ingredients

1 cup rice (non-enriched, Basmati rice is the best)
    2 tbsp canola oil
    1 tsp salt
    1/2 tsp. garlic powder
    2 1/4 cups of water

Directions

Rinse the rice in a sieve. Put it in a saucepan that holds at least four cups. Turn the heat to medium high and add the canola oil, salt, and garlic powder. Stir and sautee the rice just until it starts sticking to the bottom of the pan, or until some of the grains turn more of an opaque white. Pour the water into the pan and stir it once or twice to loosen any rice that may be stuck to the sides. Reduce heat to medium and put a lid on, leaving it slightly cracked. After 20 minutes, turn off the heat and put the lid on completely. Transfer to a bowl right before serving.

Makes about four 3/4 cup servings.
