Ingredients

    1/2 cup shredded romaine lettuce
    5 red onion rings
    1 oz mozzarella cheese
    1/2 inch thick tomato slice diced
    Drizzle with 1 T balsamic vinaigrette

Directions

This recipe makes a single serving. Feel free to double triple or quadruple etc.
For a Greek twist substitute mozzarella with 1 oz Feta!

    Sounds more like a Greek Salad to me with the feta cheese.
    To make it Italian you should use mozzarella cheese or some chunks of parmiggiano.
    But I agree we use this almost every day as a side dish. Also to get the veggies we need. :)
