Ingredients

    3 lbs sweet potatoes, cubed
    3 peppers (different colors is best)
    1 red onion, diced
    1/2 cup chopped basil

    1/3 cup olive oil
    2/3 cup cider vinegar
    1/2 tsp salt
    1/2 Tbsp honey
    3 cloves garlic, chopped.

Directions

Boil sweet potatoes until they're tender (about 8 minutes). While they're cooking, chop up peppers, onion, and basil.

Mix up dressing ingredients and toss with salad. Stevia can be substituted for the honey.

You can also toss this with Annie's Naturals Roasted Red Pepper Vinaigrette, which tastes great with this.

This is great right away, but is even better after it's had a chance to mellow in the fridge.

    Nice hot weather recipe & sweet potatoes are a bit more nutritious! I didn't have everything on hand, so I used s.potatoes, peppers, celery, & cilantro. I also omitted the garlic. The family liked it! - 5/23/09

    I was just out at my dad's place today and they also added cubed mango to the recipe. Yummers. They also used cilantro, since it's in season right now.
