Ingredients

    1/2 cup cooked white rice with rice vinegar and splenda
    1/4 ripe avocado, sliced
    1 medium mushroom, sliced
    1 sheet sushi nori

Directions

lay the nori out on a bamboo sushi mat shiny side down, spread 1/2 cup of rice onto the nori. lay the mushrooms and avocados down the center and roll it all up using the mat.

makes 1 serving (usually cut into 4-6 rolls)
