Ingredients

1 cup steel cut oatmeal
3 T. olive oil
1 small onion, finely chopped
1 clove garlic finely diced
3 cups chicken broth
1 teaspoon dried thyme
1/2 cup chopped pecans or walnuts
1/3 cup dried cranberries
salt and pepper to taste
Directions
Makes eight 1/2 cup servings.
Preheat oven to 400 degrees. Toast oats on a big cookie sheet with sides for 5 minutes. Remove from oven and set aside.
Heat olive oil in heavy saucepan over medium high heat. Stir in onions and garlic and saute' 2 minutes. Stir in thyme, nuts, cranberries, and saute' an additional 3 minutes. Stir in chicken broth and heat until broth is hot but not boiling. Add oats and bring to a boil. Cover and simmer on low heat for about 25 minutes or until broth is absorbed, stirring occasionally. This makes about four cups of pilaf.
