Ingredients

    2 med Red Potatoes (peel on)
    2 stalks of celery diced
    1 large carrot diced
    1/4 c of rough cut onion
    1/4 c diced tomato (seeded)
    2 tsp of any brown mustard
    2-3 slices cooked bacon (crumbled)
    1 large hard boiled egg
    1/2 c Mayo
    1 tsp Dill
    1 tsp Garlic or garlic powder
    Opt. 1/4 tsp paprika
    Opt. 1 tsp fresh horseradish

Directions

Dice potatoes (with skin) before boiling. Add Dill and garlic powder to water. Put potatoes in and bring to boil for 20 minutes or until potatoes fall off of fork.
Drain/Cool

Seperate bowl combine other ingrediants and stir well. Salt/Pepper to taste. Add Potatoes and Mayo (to taste, you don't have to add the whole 1/2 c) refrigerate till chilled (approx. 1 hour)

Opt. Add paprika and fresh horseradish.
