This is very light for pizza and very filling. Even my 4 year old will eat the veggies. Makes for a quick and easy vegetarian lunch. Make sure to use a whole wheat or multi-grain lavash. Ingredients

Joseph's Flax, Oat Bran & Whole Wheat Flour Lavash Roll-Ups (1 whole)
Sundried Tomato Pesto, Stonewall Kitchen, .25 cup
Spinach, fresh, 2 cups
Mozzarella Cheese, part skim milk, 2 oz (in small cubes or shredded)
Parmesan Cheese, hard, .5 oz (shredded fresh)
Carrots, raw, .5 cup, strips
Mushrooms, fresh, .25 cup, slices
Directions
Preheat the oven to 400
Place lavash on a cookie sheet
Spread the pesto evently over the lavash
Sprinkle on the mozzaella cubes, spreading as evenly as possible
Cover with spinach
Sprinkle finely grated parm over the spinach
Dot with carrots and mushrooms (and any other desired veggies)
Bake at 400 until cheese is melted and edges are crip
