Introduction

Ingredients

1/4 cup eggbeaters or 1 egg
1/4 cup lowfat cottage cheese
1/4 cup lactaid, non fat milk
1 tsp vanilla extract
2 tablespoons whole wheat flour
1 tbsp margarine
1 packet of your favorite sweetener or 5 drops of stevia
Directions
1. In a small bowl, beat the egg with a whisk until creamy.
2. Push the cottage cheese through a wire strainer into the egg in the bowl. Mix well.
3. Add flour then vanilla. Mix well.
4 Melt margarine in a skillet and place over low heat. When the skillet is hot, spoon the batter into the skillet making four pancakes. Flatten slightly with the back of a spoon. Cook 2-3 minutes on each side, or until lightly browned. **
5. Serve with applesauce, apple butter or your favorite sugarless whole fruit preserves. Or you can sprinkle plain cinnamon on top.
**If you want, you can pour the entire batter into a frying pan, and simmer, cutting it in half for 2 servings.
