Ingredients

    1 large sweet potato
    1 can black beans
    6 corn tortilla's
    1 cup enchilada sauce
    1 tsp cumin
    1 tsp chili powder
    1 tsp onion powder
    1 tsp garlic powder

Directions

Bake and mash sweet potato. Slightly mash beans, and add spices. Layer ingredients in a loaf pan. Starting and ending with enchilda sauce. Making three layers of tortilla. Bake at 425F for 20 minutes.

    O.K.
    This is a perfectly fine dish. But, it had no "wow factor" to it. I doubt I'll make it again. - 9/3/09
