Introduction

Ingredients

4 hard boiled egg whites (an egg substitute may be used to make recipe vegan)
1 tbsp Yellow mustered
fresh (or dried) cilantro
fresh (or dried) spearmint
crushed pepper
paprika
black pepper
Directions
Cook time does not include boiling the eggs.
Shell the eggs and get rid of the egg yoke. Put the egg whites in a bowl add in mustered, herbs and seasoning.
I do not measure my herbs and seasoning but merely go by what looks good. You can add or take out any of the seasoning or herbs as you see fit. I happen to grow mint and decided to add it at the last minute because it smelled yummy. It is not necessary but will add a little bit of flavor.
If you really want measurements use about a tsp for the seasonings and a tbsp for the fresh herbs.
Mash all the ingredients together with a fork using a table knife to help cut ingredients into smaller pices if need be.
Divide the mixture in half and use the mix to make your sandwiches.
Makes 2 servings.
