I got this Recipe from my Weight Watcher Class. Good Idea This recipe doesn't have to b e limited to sandwiches. Use remaining edamame spread as a healthy dip for your favorite raw veggies or rice crackers Keep in mind that 1 teaspoon of the edamame spread has a Point value of 1 per serving. Ingredients

6 C. Water
1 bag (16 oz) Frozen shelled edamame (soybeans)
1/2 tsp Salt
1/2 tsp Black Pepper
2 T. lemon juice
2 T. Weight Watchers Reduced Fat Whipped Cream Cheese Spread
30 Slices Sara Lee Delightful Whole Grain Bread
30 ounces Lean ham, thinly sliced
Directions
1. Bring water to a boil in a medium pot. Cook Edamame according to package instructions (about 4-5 minutes). When Soybeans are done, set aside about 1 cup of the water they were boiled in. Drain edamame (soybeans) thoroughly. In a food processor, combine edamame, salt, pepper, leon juice, and cream cheese. Pulse on medium-high speed until smooth, pausing occasionally to add 3-4 Tablespoons saved water to edamame mixture.
2. Transfer edamame spread from food processor to covered container and cool in refrigerator. When spread is cooled, spread 1 Tablespoon edamame spread on each slice of bread. Assemble sandwich with 2 oz. lean deli ham slices (each sandwich) Wrap Sandwich securely with plastic wrap, and take with you. Makes 30 sandwiches. or you can make one and use the rest for dipping or later sandwiches.
