Every week with my local organic produce delivery, I get a recipe for suggested use of al the fresh veggies in my box. This one is very tasty, and versatile.
Number of Servings: 4

Ingredients

    1 or 2 handfuls (about 1 cup) of sliced shiitke mushrooms

    1 TBSP sesame oil
    1 crushed garlic clove
    1 small chopped onion
    2 carrots, cut lengthwise and sliced at an angle
    2 TBSP of soy sauce
    2 cups of stir fry greens or kale, washed and ribboned

Directions

Heat a wok until searing hot
Add the sesame oil, onion, and garlic, and stir fry for about 1 minute.
Add the carrots, and stir fry until they are cooked to your preference.
Add soy sauce.
Add stir fry greens and mushrooms- stir fry for a couple of minutes.


Serve at once. Can be served over rice or asian noodles, or with meat, but not included in the calculations.
