Number of Servings: 5

Ingredients

    1/3 cup Fresh Squeezed lemon juice
    2 Tbsp. Olive Oil
    1/2 tsp salt
    1/2 tsp fresh ground black pepper
    1/2 tsp ground paprika
    1/4 tsp red pepper

    1 can dark red kidney beans, drained and rinsed
    1 can cannellini beans, drained and rinsed
    3/4 cup chopped red onion
    12 oz red cherry tomatos, quartered
    1/2 cup fresh chopped parsley

Directions

Mix together first 6 ingredients, stir well. Lightly pat excess water off of beans after rinsing. Add beans and rest of ingredients and blend.

Makes about 5 servings.

    This was SO good! My husband and I loved it. I made enough for 2 days. The second day, it was even better because it had time to soak in all the flavors. Will definitely make again! - 5/29/11
