Number of Servings: 6


    one-half cup olive oil
    4 eggs
    1 clove garlic, chopped
    one onion, chopped
    3 cups grated or thinly sliced zucchini
    a handful of various fresh herbs chopped (parsley, oregano, tarragon, rosemary, basil, chives, thyme, sage) or, alternately, one-half teaspoon each of dried oregano, basil, and thyme)
    1 and-a-half cups grated cheese (Cheddar, Monterey Jack, Parmesan, Swiss)
    three-quarters cup flour
    2 teaspoons baking powder
    1 teaspoon salt


Whisk together the oil and the eggs. Add the vegetables and herbs, and 1 cup of the cheese. Mix in the dry ingredients. Spread in a greased shallow casserole, sprinkle the remaining cheese on top, and bake in a 350 oven for 40 minutes until browned. Let stand 10 minutes before cutting. Serves 6 as a main course.
