Ingredients

    8oz. queso fresco (latino market)
    1tsp aji amarillo (yellow pepper paste) (latino market)
    1/4 cup (or to desired consistency) nonfat milk
    1 key lime juice
    1tbsp olive oil (light so it doesn't change the flavor)
    1tsp white pepper or to taste
    1tsp salt or to taste (the cheese is sometimes salty)

Directions

put in a blender on high : the cheese (queso fresco) add lime juice, oil, aji amarillo and some milk then taste it, see the consistency and add more salt, pepper, lime juice and more milk if desired.
you can eat this on top of baked/boiled potatoes, a salad made with lettuce and hardboiled eggs, over rice or pasta or as a dip for veggies/small potatoes/chips
