If you HAVE to have some fried okra, then this is the best way to do it without sacrificing ANY of the flavor!! Honestly!!Remember that 25% of the "fats" in this food are Omega-3 Fatty Acids... Ingredients

4 cups sliced okra (fresh tastes & cooks best-- if frozen, let thaw completely)
1/2 box Jiffy Corn Muffin mix (approx. 3 servings)
1/2 cup flaxseed meal
2 cups Cheerios, pulverized to powder
1 tbsp salt
2 tsp black pepper
4 egg whites (large)
1/4 cup almond milk
3 cups canola oil
Directions
Pour oil into deep skillet or fryer, heat at medium for approximately 15 minutes.
Blend well corn muffin mix, cheerios, flaxseed meal, salt and pepper in large mixing bowl. Set aside.
Blend egg whites and almond milk until frothy.
Wash okra in egg whites/almond milk and then toss in dry mixture until evenly covered.
Pour okra into hot oil. Fry for ten - 12 minutes. If in skillet, be sure to turn okra over in oil halfway through cooking time.
Remove from oil and DRAIN WELL (I put 4-5 paper towels into collander or steamer basket and spread okra evenly-- one okra deep- over the surface) for about 5 minutes.
Serve and enjoy!
