Introduction

I substituted the whole eggs for egg whites. You could also substitute the Canola Oil (10.65 tbs=2/3 c) with apple sauce or plain yogurt for an even healthier version. We made these at work and topped them with lo-cal syrup, bananas and walnuts. Delicious! I substituted the whole eggs for egg whites. Ingredients

    1 Box Belgian Waffle Mix
    (I used Krusteauz Brand-1 Box =5 Cups of Mix)
    6 egg whites
    2/3 Cup Canola Oil or Light Extra Virgin Olive Oil
    3 Cups Water

Directions

I used the whole box (5 cups) of waffle mix because it said it would serve 10. That was figuring 1/2c mix per waffle. We actually only used about 1/4c mix per waffle!

Crack and separate the egg whites and discard the yolks (or keep if you are so inclined, for another use)
Measure in the oil or oil substitute. Whisk well.
Add the 3c of water and whisk until well blended again.
Slowly add in the entire box of waffle mix, whisking with downward strokes and around the edge. Be sure to let the batter rest a minute before pouring into the iron to let some of the air bubbles release.
Pour about 1/4 c onto a heated iron and cook till crispy and waffle releases easily from iron.
Top with your favorite toppings (fresh fruit! healthy nuts! honey! reduced fat peanut butter! YUM!) Enjoy :)
