Ingredients

    8 medium sized roasted beets

    1/2 cup toasted walnuts

    3 oz crumbled Gorgonzola or other blue cheese

    2 cups of fresh baby arugula

    1/4 tsp kosher salt

    1/4 tsp fresh ground black pepper

    2 tbsp good olive oil

    1 tbs white balsamic vinegar

Directions

Scrub beets, wrap individually in foil, place in baking dish and bake at 400 degrees for approximately 1.5 hours or until cooked. Cool and peel beets. Cut into bite sized pieces. Sprinkle with salt and pepper, balsamic and olive oil. Toast walnuts, roughly chop and sprinkle in with beets. Toss. Sprinkle crumbed cheese. Toss. Add arugula and gently toss. Serve at room temperature.

    I washed two large grapefruit sized freshed beets then steamed them in my pressure cooker for 20 minutes to save time and then used your recipe and WOW WOW Awesome! Fabulous will make often! - 7/31/11

    Thanks for your recipe. I make a similar recipe replacing the Gorgonzola with goat cheese, increasing the arugula to 8 cups, reducing the beets by half, using toasted pecans and tossing it in a homemade mustard vinaigrette. I loved your version too! Thanks! - 3/30/11

    Very yummy! My first time making beets and will definitely do it again. Made with mixture of baby arugula and spinach leaves. Didn't mix it all together, though, so the leftovers wouldn't get soggy. - 9/5/12

    Delish! The beets are much easier to peel after roasting. The smell wonderful while baking, like a mix of baking potaoes and beets. - 3/12/10
