Introduction

Make sure to chop the onions into large chunks, otherwise they will burn. This is also good if you add in cubed fingerling potatoes, but you will need to account for the extra calories. Number of Servings: 8

Ingredients

    2 C. Carrots, cut into sticks
    2 C. Sweet Potatoes, cut into 1" cubes
    2 medium yellow onions, chunked
    2 T. olive oil
    1/2 t. Garlic Salt
    1 T. Italian Seasoning

Directions

Toss all ingredients together in a large bowl, making sure veggies are evenly coated. Roast in single layer on a baking sheet in a 400 degree oven. Cook for 40 minutes, turning veggies halfway through cooking time. Serves 8. Each serving is roughly 1/2 C.
