Introduction

My family loves to make this during Thanksgiving, and it buys some time if dinner is taking a little longer than expected. We use a 15 ounce wheel - I could only find a calorie count for 3 smaller ones - but the calories will be very close either way. Ingredients

    1 - 15 ounce Brie wheel
    1/2 cup reduced sugar apricot preserves
    1/2 cup whole berry cranberry sauce
    Optional: sliced almonds for garnish (calories not included in this recipe).

Directions

Carefully slice off top quarter-inch of brie and set top aside. Hollow out center of cheese, leaving 1-inch of "shell" all around, saving cheese for another use. Place brie shell in ovenproof serving dish. Break up cranberry sauce with fork and spread evenly in center of shell. Cover with the top of cheese wheel that was removed. Spoon apricot preserves evenly on top; sprinkle with sliced almonds if desired.

Bake 8-10 minutes in a pre-heated 350 degree oven or until soft and slightly melted. Serve with your choice of crackers. Makes 12 servings with 135 calories each serving.
