    120g (1 cup) whole wheat flour
    110g (1 cup) oat bran
    188g (1 cup) sucanat or 200g brown sugar
    2 tsp. baking soda
    2 tsp. baking powder
    2 tsp. cinnamon
    1 tsp. ginger
    1/2 tsp. salt
    2 cup cooked mashed sweet potatoes
    1 tsp. vanilla
    4 eggs
    1 cup buttermilk
    2 T. oil
    1 cup pitted chopped dates


Preheat oven to 350. Spray a 9"x13" baking pan with non-stick spray.
In a small bowl, combine all the dry ingredients. In a separate large bowl, whisk together all the wet ingredients. Pour the dry ingredients into the wet and mix just until combined. Stir in the dates. Pour into the prepared pan and bake for about 35-40 minutes or until it tests done. Makes 12 servings.
