Introduction

This is a traditional miso soup that is perfect for those times when you need something with just enough flavor to not overwhelm you, but not so little flavor that it sucks! This is a traditional miso soup that is perfect for those times when you need something with just enough flavor to not overwhelm you, but not so little flavor that it sucks!
Number of Servings: 12

Ingredients

    12 cups filtered water
    1/2 medium yellow onion, cut into half moons
    2 carrots, peeled and chopped
    1/3 cup yellow or white miso
    14 oz. (one package) firm tofu, cut into cubes

Directions

Add water to stock pot and bring to a boil. Once water is boiling, add tofu, onions, and carrots to pot and turn heat to medium-high. Cover and let cook for 15 minutes.

Turn heat to low and add miso. Simmer uncovered for 5 minutes.

    Pretty good! A bit bland for my taste though -- I added in a little sea salt and some balsamic vinegar -- I also threw in some mushrooms I needed to use up. Yes, I will probably make this again. It makes a good meal when you want something hot and light. - 3/19/10

    Incredible!
