Ingredients

180g caster sugar
2 eggs & 1 egg yolk
250g plain flour
½ tsp baking powder
80g macadamias, finely chopped
Directions
Preheat over to 160ºC. Line a large baking tray with baking paper.
Beat caster sugar, eggs and egg yolk in the bowl of an electric mixer on high speed for 4-5 minutes until thick and creamy.
Sieve the flour and baking powder together. Fold the flour mixture and macadamias into the egg mixture with a wooden spoon to a sticky dough. Spoon onto prepared tray and, using wet hands, form into a long loaf sape about 3-4cm high and 8cm wide. Bake loaf for 20-25 minutes until firm. Remove from the oven and allow to cool slightly. Reduce the oven temperature to 120ºC.
Cut loaf into 2mm-thick slices. Lay pieces in a single layer on 2 baking paper-lined trays. Bake for 5-10 minutes until drisp but not coloured. Cool slightly.
