Ingredients

    1 tbsp oil
    1 onion, chopped
    3 cloves garlic, minced
    2 tsp red curry paste
    5 c chicken or vegetable broth
    1 c coconut milk
    3 tbsp fish sauce
    2 pounds orange sweet potatoes, chopped
    1 c red lentils
    2 tsp brown sugar
    2 tbsp lemon juice
    Cilantro to garnish


Directions

Saute onion in oil five minutes, add garlic and curry paste, saute one more minute, add all but lemon juice and cilantro. Cook 20 minutes or until lentils are soft. Puree in two batches. Return to pan, reheat, and stir in lemon juice. Makes about eight smallish servings or four really big main dish servings.

    Incredible!
    Love this soup! Can't wait for the cold weather to come so I can make it. I like it better with vegetable stock instead of chicken and I like to use 2 stalks of chopped fresh lemon grass instead of lemon juice for a more authentic Thai experience. - 1/14/15
