Introduction

Good as dessert, a side item, or added to baby spring mix or spinach salad as a topping. I also make this with grated carrots but I got a good price on pre-cut julienned carrots. Ingredients

    1 cup measured julienne-cut carrots
    0.25 cup raisins
    1 ring dried pineapple chopped
    2 tbsp chopped walnuts
    2 tbsp mayonnaise
    1 tbsp juice from an orange ( can also use lemon juice for tangier flavor)

Directions

Mix all ingredients together in a bowl and place in refrigerator to let flavors mix.
Tastes best if it sits overnight but can be eaten after 1-2 hours.
Makes 4 quarter-cup servings as a side dish or 8 1-oz servings as a salad topping.
