Delicious and incredibly simple appetizer, perfect for an Italian meal. You can get fancier by using whole, fresh basil leaves and adding tomato slices, but it's not necessary. Ingredients

    1 Whole French Bread Baguette
    1/4 cup Extra Virgin Olive Oil
    30 Mozzarella Medallions
    Ground Dried Basil
    Ground Dried Oregano
    1 tbsp Grated Parmesan Cheese

Directions

Slice French baguette into slices about 1/2 inch thick. Stir herbs into olive oil in a small cup and baste each slice of French bread on one side with the olive oil/herb mixture. Sprinkle a few herbs on top. Toast on toaster oven rack (on a perforated metal platter) until browned at the edges -- they will be crunchy. Remove from toaster oven and sprinkle a pinch of parmesan cheese on each slice.

Serve alongside fresh mozzarella medallions with a small fork so guests can top a piece of bruschetta with fresh cold mozzarella and eat up.

Makes about 30 bruschetta appetizers.
