Introduction

This is the simplest thing for a bagged salad mix to take to work. Just add all the ingredients (except the salt) into your container, shake, add salad greens, take to work. When you're ready to eat it, salt the salad (sparingly!) and shake the container. Voila.

The honey and mustard will keep the dressing from separating, but be sure to use oil and vinegar you really like; you still really taste both.

Ingredients

1 tsp dijon or whole grain mustard (1 small squirt from the bottle)
    2 tbsp extra-virgin olive oil
1 tsp fresh ground black pepper (about two grinds from the pepper grinder)
1 tbsp cider vinegar (red wine, sherry and rice vinegar are good, too)
    1 tsp honey
*optional - a pinch of dried tarragon

Directions

Combine all ingredients in a container and close and shake to combine (or in bowl and whisk). Pour over salad and toss to combine.

If taking to eat later, you can dress your salad ahead of time but should wait to add the salt until you're ready to eat; it will wilt the greens if left more than about 30 minutes.
