Ingredients
-
1 lb. dried split peas
1 lg. onion (white or yellow), chopped finely
1/2 bulb garlic, peeled, crushed and minced
2 celery stalked sliced into spears then chopped finely
[optional!]4 carrots, chopped into 2" chunks
1.5T black pepper
2T Light salt
1T paprika
Directions
Wash, chop, crush, mince, dice the foods.
Rinse the dried peas well and inspect for pebbles.
Put 3x-4X volume water over peas and toss everything in.
When it comes to a boil, let it simmer for about 30 minutes.
It'll look liquidy when you're done, but it'll start to thicken as soon as you take it off the burner. The more liquid you put in, the looser the soup will be.
If you want to increase the creaminess, take 2C (without the carrots) and blend them until pureed. Then add them back into the soup.
