This recipe is super easy and tastes almost identical to the classic dish! This recipe is super easy and tastes almost identical to the classic dish!
Number of Servings: 24


    4 Eggs
    2 C. Canned pumpkin
    2C. Lite Cool Whip
    2 Tbsp ground allspice
    2 Tbsp pumpkin pie spice
    2 tsp cinnamon
    18 pkts Truvia (or Splena) sweetener (can be adjusted to your prefered level of sweetness)
    1Box instant vanilla pudding mix unprepared
    6 slices whole wheat light bread


Mix everything but the bread in a medium sized mixing bowl until well blended. Spray 9X13 cake pan with light non-stick spray Sprinkle with a blend of Truvia and cinnamon (optional) roll bread pieces very flat and press into bottom of pan to form crust. lightly spray top of bread with non-stick spray. Pour liquid on top of bread and bake at 350 for about 45-50 minutes or untill center sets. serves 24 slices. GREAT with light whipped cream as a topping!
