Number of Servings: 14

Ingredients

    3 boneless skinless chicken breast 4oz a piece
    2 Teaspoons Extra Virgin Light Olive Oil
    1 clove or chopped Garlic
    1 Teaspoons Smart Balance light butter spread
    1 cup yellow onion chopped
    32 oz package of frozen Vegetables
    2/3 cups of flour
    4 cups chicken broth sodium free
    1 cup fat free milk
    2 9inch ready to use pie crust
    salt
    pepper
    2 teaspoon onion powder
    2 teaspoon Garlic powder
    2 teaspoon Oregano
    2 teaspoon Cayenne Pepper

Directions

First cut chicken up into bit size cubes add salt and pepper both side of chicken with 1 teaspoon of Salt and pepper set aside what is left. In Dutch over heat Olive oil about medium to high heat until smoke appears and then place chicken in with onion and chopped garlic. Turn down heat to about medium after you add the chicken. Then add butter salute until chicken is done. Remove chicken ONLY and set aside. The Olive oil and butter still should be left in the pan. Then add frozen vegetables cook until the vegetables are tender. Then add back the chicken to the mixture then add onion powder, garlic powder.Oregano, Cayenne Pepper and the remaining Salt and Pepper that was set aside from before. Taste the mixer at this point to make sure it taste good. You can add extra spices to your liking. Cook mixture for about 2 to 3 min to combine the spices together. Then add add milk to the pot . At this point in a seperate container combine and stir about 2 cups of broth and flour together so there is no lumps and pour into the chicken mixture and stir. Then go ahead and add the remaining 2 cups of broth that you have left into the pot. Cook until mixture thicken up. This will not take long about 5 to 10 min. Then taste the receipt again to make sure it is seasoned to your liking. Then pour mixture into a casserole dish. ( I split mine in half and only cook one at a time and then freeze the other half for another time.) Cover dish with one pie crust and crimp the edges like if you were baking a pie. slit a couple of holes in top to vent. place in a 350 degree oven for about 30 to 35 min to brown pie crust.
Watch closely. The mixture is done at this point you only want to cook crust. This will feed 14 people 1 cup serving but like I said before you can make the full batch and place have the mixture in the freeze and use for another meal. At only 204.2 Calories and 6.7 g of fat . You can add a side salad for a great meal that won't put you over you limit for the day. Enjoy!!!
