Number of Servings: 20

Ingredients

    Olive Oil, 2 tbsp
    Pimentos, 1 pimiento, whole
    Onions, raw, 1 cup, chopped
    Garlic, 2 tsp
    Mushrooms, fresh, 1 cup, pieces or slices
    Celery finely chopped
    carrots finely chopped
    Tomatoes, red, ripe, canned, whole, no salt italian seasoned -added, 8 cups
    Oregano, ground, 3 tbsp
    Rosemary, 2 tbsp
    Basil, 2 tbsp
    Pepper, black, 1 tsp
    Tomato Paste, 0.5 cup
    Parmesan Cheese, grated, 2 oz
    Whole Wheat Pasta, cooked (pasta), 6 cups
    3 cups water
    (other diced veggies may be added, zuccini, broccolli,butternut squash)

Directions

Heat olive oil, chopped garlic, onion just till golden
add tomatoe paste... sir till gently cooked ... add veggies ... steam for approx 10-15 min ... add tomatoes and herbs... add water .. simmer 45 min till cooks down some to thicken.

Season pasta with a dash of black pepper and a little grated cheese.

Top with veggie sauce.(data base used sodium canned tomatoes, I used no salt added variety and 0 sodium, Tuskas tomatoe paste) The sodioum for added flavor comes freom a sprinkle of grated cheese, if desired.

This recipie makes 10 servings.
3/4 cups pasta cooked/servings topped with 1 large cup of veggies/sauce.
