Introduction
I just threw this together one night and it was FABULOUS, filling and good for you! The perfect thick soup without any cream. I am trying to recreate the recipe with accurate measurements, but really I just threw stuff in, so as long as you don't add any extra chicken or barley the nutritional info will be correct. Go ahead and add what you like as far as amount of veggies (sans potatoes). I just threw this together one night and it was FABULOUS, filling and good for you! Ingredients

1. 7 oz of chopped chicken ( I used dark because I was deboning a chicken I had cooked and we already ate the breast in a previous meal)
2. 2 lg carrots, chopped
3. 3 celery stalks, chopped
4. 1 can of 98% fat free mushroom soup
5. 5 cubes chicken bouillon
6. 6-7 cups water (more or less depending upon how thick you like your soup)
7. 2 red potatoes - med size chopped (leave peel on)
8. 3/4 cup of 10 min quick cook barley oats
9. can add any additional spices you might like, I didn't add any and it still had a great flavor
10. can add any additional veggies that you like too, I added mushrooms (canned) and that was good too.
Directions
Put mushroom soup in pan with water on med/high heat. Put in all chopped veggies, barley, chicken bouillon. Cook about 30 minutes or until veggies are soft. The soup will thicken because of the barley and make a yummy thick soup. Makes 8 - 1 cup servings (serving size could be larger if you added more water and it was less thick)
