Ingredients

3 oz Orzo, Barilla, uncooked
3c Barley, pearled, cooked
1/2c Broccoli, fresh, chopped
1/2c Peppers, sweet, red, raw, sliced
1/2c cherry tomatoes
1/3c jicama
1/2c Onions, raw, chopped
2Tb Basil
1/2c Carrots, raw, strips or slices
3 cloves Garlic,
10g Peanut Butter, smooth style,
1 TB reduced sodium tamari
3 tsp Ginger Root,
3 TB*Trader Joe's Thai Peanut Sauce
1/4c orange juice
Directions
Cook barley and orzo according to package directions, cool.
Add tamari,garlic,basil and ginger to orange juice and peanut sauce, mix well.
Chop vegetables into bite size pieces mix with sauce, add barley and orzo. Mix well, refrigerate.
