Ingredients

4 Tbs olive oil
1 C chopped onion
2 cloves garlic, minced
1 jalapeno minced
1 tsp chili powder
1/2 tsp cumin
1/4 tsp black pepper
12 oz meatless fat free crumbles
48 baked tortilla chips
15 oz pinto beans, low sodium
1 can Rotel with lime juice & cilantro
1/2 C shredded low fat mexican cheese
2 Tbs fat free sour cream
2 Tbs chopped green onions
1/4 c sliced black olives
Directions
*Preheat oven to 375'
*Heat 2 Tbs oil in lg nonstick skillet over medium heat. Add onion, garlic & jalapeno, cook 1 min. Stir in spices and crumbles, cook 3 mins.
*Arrange 1/2 tortillas in bottom of an 11x7 baking dish coated with cooking spray. top evenly with crumbles mixture.
*Heat remaining 2 Tbs oil in same skillet over medium heat. Add beans, mashing with the back of a wooden spoon until chunky and thick, cook 2 mins. Add Rotel with some of the liquid poured off.
*Layer bean and Rotel mixture over crumbles. Top with remaining chips, crushed a little bit. Sprinkle evenly with cheese. Bake at 375' for 20 min or until cheese is bubbly.
*Cut casserole into 6 equal portions. Top with 1 tsp sour cream, green onions and chopped olives.
