A yummy favourite!

Having it open faced means more egg and protein!

This recipe makes 4 servings so its one slice of bread and a 1/4 of the mix. This goes great with some veggie soup or a small salad.

This recipe makes 4 servings so its one slice of bread and a 1/4 of the mix. This goes great with some veggie soup or a small salad.

Ingredients

    5 Hard boiled eggs
    1 tbsp horseradish (you may want to adjust this according to taste)
    5 tbsp light mayo or salad dressing
    salt and pepper to taste

Directions

Boil eggs for about 15 min until done. Let cool. Remove from shell and dice up to desired texture. Add mayo, horseradish and salt and pepper to taste.

I then take this mixture and add to a piece of toast (open) with lettuce. That way I can enjoy egg salad without feeling so guilty!

Calories don't include bread...that way you can add your own or use crackers or pita or whatever.
