Introduction

Ingredients

    1 12 ounce package broccoli slaw
    1 medium red onion diced
    1/2 c. water (minus 2 tbs.)
    2 tbs canola or olive oil
    1/2 c. salted roasted shelled sunflower seeds
    1 package BEEF ramen noodles (crumbled) with seasoning packet PLUS one additional beef seasoning packet
    1/2 c. red wine vinegar
    5 1oz. (single serve) packets of STEVIA or the sweetener substitute of your choice

Directions

This makes approximately 8- 1/2 cup servings. For best flavor, allow to refrigerate at least 1 hour.

Measure together in a medium large bowl the water, oil and vinegar. Add the beef seasoning packets from 2 packages of RAMEN noodles and whisk together.

Finely dice the red onion and add to the dressing. Mix together well. Add the broccoli slaw and the sunflower seeds and mix well after each addition. Crumble the noodles from one package of BEEF ramen noodles and mix gently into salad.

Cover tightly and chill for at least one hour. Serve as a side to your favorite meat. Goes great with Asian dishes like teriyaki grilled chicken.
