These are the most wonderful muffins. They have no fat and the only sugar comes from maple syrup, plus the dark chocolate chips. I prefer to use Ghirardelli dark chocolate chips and oat flour. I also use the large muffin pans, so you get 12 large muffins. This recipe would make 24 of the normal small size muffins.
The base for any mix in quiche. I always use Kale and spinach, but then add other items.

I've set the serving size 1/2 cup as I find this is plenty for me (I'm a hearty eater).
