Boil rice, when soft add in navy beans, and spices. Cook for 5 minutes. Take off heat, stir, cover and refrigerate. Do not reheat. Eat cold.

Low carb soup, thick and tasty. Typically, such a soup would be thickened with potato; pureed cauliflower makes an excellent low-carb alternative, adds excellent texture and flavor. The only thing about this soup is that you have to pay attention at the beginning, until you've added the broth. Both garlic and cabbage will easily burn if you don't pay attention and the burnt flavor will permeate the soup. If you happen to burn them, you'd best toss and start over, or make something else, like a hash maybe?
