I make this every week and have it for lunch. The longer it sits mixed up the better it tastes.

Ohio... Taco Tantos in Kent makes these and this is a good duplicate. Freeze and take to work to microwave for a perfect, filling lunch.
Chicken sausage and fresh vegetables over yellow rice -- an easy, pleasing, 30-minute meal
Peel skin back off of the chicken. Slice both breasts completely off the bone. (balance I normally throw way or debone and give to the cats).
Chop chicken and combine all ingredients in a large bowl. Mix well. Add honey mustard for more creaminess. Curry powder to taste.
A moist, juicy stir fry that is high in protein and veggies ("good" carbs), low in fat and "bad" carbs.
Take a simple beef and veggie soup and top with mashed potatoes and cheese. bake in the oven till nice and hot. makes one serving.
The roast beef has a lot of sodium in it so substituting a low sodium lunchmeat would be better for those watching their sodium intake.
Today I was in a hurry to go out to the museum. As I did not want to eat out I just fixed this salad in literally 5 minutes. This is an emergency salad! LOL I had to share.
