Worry-Free Banana Muffins
Worry-Free Banana Muffins

I always feel badly that the goodies I take to my counsellor can't be shared with his son - he has severe tree nut, peanut, dairy and soy allergies. I resolved to find a treat that worked for him - and these super-moist muffins made with roasted bananas, coconut milk and canola oil get an extra banana boost from crunchy banana chips! This also makes a 9x13" cake, or two 9" layers.

Tangy Lemon Squares
Tangy Lemon Squares

Adapted from the Rosie's Bakery All-Butter, Cream-Filled, Sugar-Packed Baking Book. Thanks to the zest and juice of 6 lemons, these bars are definitely not lacking in tartness or citrus flavour! The custard has less sugar than your standard lemon bar and tastes refreshing and bright, without any allusion to the eggy base. Bring a pan to the next picnic or bakesale and watch it disappear!

Homemade Sour Patch Kids
Homemade Sour Patch Kids

Adapted (and scaled *way* up) from the recipe in Classic Snacks Made from Scratch, I used POM pomegranate juice, extra citric acid (I love super-sours) and did away with the cornstarch-powdered sugar part of the coating. Tropical Coco Nots Recipe
Tropical Coco Nots Recipe

This yeast-raised doughnut recipe is heavily adapted from Heidi Swanson’s website, and flavoured with the divine tropical flavours of coconut and pineapple. Don't over bake these, if anything, under bake them a bit - they will continue baking outside the oven for a few minutes. You want an interior that is moist and tender - not dry. The dough can be made and baked a day ahead if necessary (store loosely covered at room temperature), but they need to be served within a few hours of being filled and glazed, otherwise they will go soggy.
