I invented this rice on the fly a few months ago and it has become a regular staple! We serve it with beef tips, 95% lean meatballs or chicken to add some protein, but it's delicious on its own!
Bean salad with sweet/tangy dressing. Serve as an appetizer with Frito Scoops or as a side dish.

I couldn't discover any recipes for it on here, and since I'm gluten-free, soy-free and quite a boring number of other good-things-free, I thought I'd provide these for others found in my shoes.
