Low Carb Graham Crackers that when crushed yield about 3 1/2 cups of crumbs
The addition of ginger, cinnamon, and cardamon to fresh plums make this crumble the perfect dessert to serve on a lazy spring weekend when the lingering chill of winter hasn't quite been shaken from the budding trees. The warm spices and slightly tart plums create a spectacular spring treat your whole family will enjoy. While it's not really a "light" dessert, it is largely due to the almonds in the crumble topping. While they are high in fat and calories, almonds are a great source of heart healthy, monounsaturated fats, and add a nice boost of protein. So go ahead, and indulge a little.
This is a great sauce that my boyfriend and I developed through some trail and error. The fat-free yogurt adds protein and a nice tangy-ness while the Marscapone cheese adds a wonderful richness. If you're really worried about the calories and/or fat, you could use only Greek yogurt, but I think you'll loose the amazing texture one typically expects in a tzatiki. We use it for a sandwich spread or dip for crudites, pita breads, or even corn chips.

This is the Joy of Cooking New York Cheesecake converted into a low carb cheese cake by replacing the sugar with Erythritol and omitting the flour. The flour makes a more dense cheesecake. I chose to leave it out and have less carbs. See the Tips section for net carbs if you'd like to leave the flour in. Also I do not use Splender because it has a very bad after taste. I use Erythritol - Xyla Sweetner
