This is a lighter, most delicious version of my best (full-fat) potato salad. The Miracle Whip gives it a sweeter flavor with no added calories, and with the added hard boiled egg, it has the taste and texture of deviled eggs. Greek yogurt is my go-to substitute to make anything creamy but not suffer the caloric consequences of heavy cream. Most people probably won't even notice the cauliflower substitution!
Golden battered and fried Sourdough bread, layers of maple glazed turkey and ham, melted aged, premium, Vermont cheddar and a cranberry spread. Sound like heaven?
