This refreshing, bright, sweet and savory quinoa salad was featured in a cooking demonstration by the Natural Gourmet Institute at the New York Vegetarian Food Festival in March 2012.
2 cups fresh spinach leaves, washed and torn
2 cups hardboiled eggs, peeled and quartered
2 tablespoons walnuts, chopped
1/2 red pepper, sliced
2 tablespoons sunflower seeds
2 tablespoos Kraft Green Goddess anything salad dressing
Mix all ingredients and enjoy.
