This delicious salad is served cold. I can also be served on a bed of lettuce with added parmesan cheese and balsamic vinegar.
While searching for a ranch dressing recipe without mayonnaise, I found this recipe on allrecipes.com, but modified it a bit. I increased the flavorings, and used full fat sour cream from grass-fed cows. The optional ingredients were not in the allrecipes version.
Strawberry Spinach Salad -- 2 servings. This is a low sodium recipe. Fresh sliced strawberries and sliced cucumber can be added for variety. This can also be used as a main dish by topping it will gripped boneless chicken (that may be marinated ahead of time in extra dressing).
Creamy like a basil vinagrette without the calories from fat, adds some protein and calcium
serve over salad of spinach, craisins, sliced apples and a few candied walnuts
This is my recipe for Peppers, Onion & Mushrooms, which I make frequently and use on eggs, pilafs and even hot sandwiches.
Original recipe called for a half cup each of sour cream and mayonnaise. I lightened it by using fat free greek yogurt to replace Sour cream and half the mayo. Used 1/4 cup mayo instead of half a cup
This would be nice for a picnic, but if you are taking it for a picnic, I recommend taking the Avocado with you and slicing it there, last minute then pouring the salad and dressing over it. We have a favorite balsamic vinegar made with pears and cinnamon that we use only for special occasions or when wanting a certain flavor. I thought it would go wonderfully with this salad. There are such a wide variety of balsamics out there, I recommend you give them a try!
Yummy, not-too-bad-for-you Caesar dressing. Thin with a bit of fat-free milk if too thick after mixing.
This dressing is a close second for the Red Pepper Dressing at Wendy's..

I usually refer to this as a "Fruit Mix" but I don't think that would be "searchable". Anyway, great videos on youtube for how to determine if a pineapple is ripe & how to prepare it. So basically, just cut everything up; add the flavorings & toss together. Best if it can sit for several hours. Sometimes hubby will add whipped cream to his individual serving but that's because he views it more as a dessert dish.
This was on a cooking show I watched the other day. She used basmati rice, but all I had was black rice. I added the quinoa for some extra protein.
