This has to be one of my favourite salad dressings. Actually I don't think I will ever buy store-bought dressings ever again! This recipe was found on cooks.com as part of the Greek Chicken Salad Recipe.
From a Rachel Ray Magazine. Not usually a fan of RR, but I was looking for a chicken salad recipe with yogurt and tried this. Full of veggies, no mayo here! I like it plain, or on a bed of fresh spinach, but makes a great sandwich too!
This can be a side salad or a vegetarian main dish. Add salt & pepper to taste but is not included in nutrition info in case you are watching sodium. A chopped chile pepper is a nice addition--Anaheim for less heat, jalepeno for more. Modified from #foodiecrusheats recipe

This is a very basic salad recipe, the veggies can be changed to fit what's in season. It keeps very well in the fridge and will last a few days at least, making it a great bag lunch choice.
I keep this salad mix in the refridgerator and add it to just about everything. Some of my favorite uses: add 2/3 tbsp of salad mix as base ingredient & up the nutritional value of hoagie, wrap,or sandwich. Or turn it into a main meal salad by adding chciken/tuna/salmon. low-fat feta, plum tomatoes & balsamic/olive oil mix - I love it!
